CHINESE CHICKEN SALAD 
About 6 oz. Maifun (rice sticks)
2 heads iceberg lettuce
4 chicken breasts, poached
1 1/2 bunches green onion
1 pkg. sliced toasted almonds
1 pkg. white sesame seeds

Fry maifun a small handful at a time; drain on paper towels. Shred lettuce, like cole slaw. Cut chicken breasts into thin strips, cut green onion, diagonally; toast sesame seeds.

Toss all ingredients (except maifun) together; place in individual bowl. Pour dressing over, add rice sticks and serve. Yum! Yum! Serves 8.
