COUNTRY GENTLEMAN 
1 hen, cooked & diced
1 1/2 qt. chicken broth
1 c. celery
5 potatoes
1 onion, diced
5 carrots
1 c. Minute Rice
1 can tomatoes
1 can green peas

Cook celery, potatoes, onion and tomatoes in a quart of chicken broth. In a large casserole alternate chicken, vegetables and rice. Bake 1 hour at 350 degrees. Add remaining broth as needed.
