TURKEY GUMBO 
3 lb. turkey necks, cut up
2 tbsp. butter
3 c. chicken broth or water
1 c. onions, diced
2 c. okra
2 c. tomatoes, chopped
1/3 c. rice
salt to taste
parsley sprigs, chopped

Cut turkey necks up and flour lightly. Sauté in butter until brown. Combine turkey and broth and simmer covered for 40 minutes. Add remaining ingredients, except parsley. Simmer for 20 minutes more. Add more broth if desired and sprinkle with parsley.

Serves 2 to 4.
