ELLEN'S VEGGIE QUICHE 
Pastry for 9-inch pie
1/4 c. Swiss cheese
3 eggs
1 1/2 c. heavy cream
1 c. zucchini, grated
1 c. carrots, grated
Salt and pepper to taste

Grate zucchini and carrots and place in bottom of pie pan. Beat eggs, cream, salt and pepper. Grate cheese into this mixture. Pour into pie pan over vegetables. Bake at 375 degrees for 40-60 minutes.
