LAZY COOK'S CASSEROLE | |
1 1/2 lbs. beef chuck, stew meat or round steak, 2" cubes 1/2 c. burgundy or other heavy red wine 1 (10 oz.) can consomme, undiluted 3/4 tsp. salt 1/8 tsp. pepper 1 med. onion, sliced 1/4 c. bread crumbs 1/4 c. flour Combine meat, wine, consomme, salt, pepper and onion in casserole. Mix bread crumbs with flour and stir into casserole mixture; mix well. Cover and bake in 300 degree oven about 3 hours or until tender. Stir a couple of times during baking, but not necessary. This is an easy and delicious way to cook beef stew and I add vegetables and mushrooms sometimes. My family likes this recipe best just plain and served over noodles with a green salad and, of course, red wine. |
