ERIC'S PEA SOUP 
1 lb. shelled or frozen peas
1 med. onion
Some mint and parsley
2 1/2 pts. chicken stock
Salt
2 tsp. curry powder
1/2 cucumber
1 sm. head lettuce
2 oz. butter
1 tsp. sugar
Pepper
1/3 pt. milk

Peel and chop cucumber and onion. Clean and chop lettuce, parsley and mint. Heat butter in large saucepan. Add lettuce, cucumber, onion and herbs, and stir until butter is absorbed. Add peas, stock, sugar, salt and pepper. Simmer until peas are soft. Pour the liquid into a blender and puree, adding the curry powder. Reheat, adding the milk, and correct the seasoning. This soup is good hot or cold. Serves 4.
