PROVOLONE CHICKEN WITH SAUCE 
2 tsp. olive oil
1/2 c. scallions
2 garlic cloves, minced
1/2 c. sliced mushrooms
1/2 c. chopped tomato
1/2 c. chopped green bell pepper
1/4 c. chopped fresh basil
4 (3 oz.) skinless, boneless chicken breasts, pounded thin
1/4 tsp. salt
1/8 tsp. ground black pepper
1 1/2 oz. shredded Provolone cheese

Preheat broiler. Spray broiler rack with nonstick cooking spray. To prepare sauce, in medium non-stick skillet, heat oil; add scallions and garlic. Cook, stirring frequently, 2 to 3 minutes, until tender. Stir in mushrooms, tomato, pepper and basil; cook, stirring frequently, 4 to 5 minutes until liquid evaporates. Cover and set aside.

Place chicken on rack; sprinkle with salt and pepper. Broil 5 to 7 minutes until lightly browned. Sprinkle cheese over chicken, broil 2 minutes longer until cheese melts and chicken is cooked through. Serve with sauce. (Weight Watchers exchanges: 1/2 fat, 2 1/2 protein, 1 vegetable.)
