VEGETABLE STROGANOFF 
SAUCE:

3 c. sour cream
1 1/2 c. yogurt
3 tbsp. dry, red wine
1 c. chopped onion
1/2 lb. chopped mushrooms
3/4 tsp. salt
1/4 tsp. dill weed
Dash of Tamari sauce
Paprika
Black pepper
2 tbsp. butter
6 c. chopped vegetables of your choice
4 c. noodles

Saute onions and mushrooms in butter until onions are soft. Combine all ingredients in the top of a double boiler and heat gently about 30 minutes. While sauce simmers, steam 6 cups chopped vegetables of your choice. Mix vegetables and noodles on a platter, pour on the sauce. Serves 6.

I added 1 tsp. paprika (I used smoked paprika, but I presume plain powdered paprika will do), and I minced 4 garlic cloves and added them with the onions and and shitake mushrooms. The SECOND time I made this recipe because without garlic, stroganoff is just not stroganoff to my palette.

The Tamari was great idea rather than plain soy! I mean it, what a better choice!

The vegetables and nuts I added were broccoli, artichokes, slivered carrots, sliced okra, thinly sliced aristocrat squash, and slivered almonds, all sauteed in olive oil.

For the pasta I used Barilla fettuccini.
