3 egg whites
1 tsp. cream of tartar
1 c. sugar
16 crumbled saltine crackers
1 tsp. vanilla
1 c. chopped pecans

Beat egg whites until foamy. Add cream of tartar and beat until egg whites are stiff. Add 1 cup sugar. Fold in crackers, vanilla and nuts. Pour into pie plate that has been sprayed with Pam. Bake at 325 degrees for 35 minutes. Cool and add topping.

TOPPING:

1/2 pt. whipping cream
Coconut
2 tbsp. favorite preserves

Whip whipping cream, add preserves. Spread over cool pie and sprinkle with coconut.
