GREEK SPINACH QUICHE | |
2 (10 oz.) pkg. frozen chopped spinach 3 eggs 1 c. half and half 1 c. crumble feta cheese (4 oz.) 2 tbsp. chopped scallions 1/2 tsp. salt 1/4 tsp. pepper Pinch of nutmeg 1 unbaked 9 inch pie shell Defrost spinach; squeeze out all water. Beat eggs in half and half in bowl. Add cheese, scallions, salt, pepper, and nutmeg. Pour into unbaked pie shell. Bake at 400 degrees 10 minutes; lower heat to 350 degrees for 25 minutes or until quiche is set. |
