GREEK SPINACH PIE | |
1 1/2 lb. fresh spinach or 2 (10 oz.) pkg. frozen 2 tbsp. butter 1/2 c. chopped onion 1 clove garlic, chopped 3 tbsp. butter 3 tbsp. flour 1 1/2 c. milk 1/4 tsp. pepper 1 1/2 tsp. salt Dash of nutmeg 6 eggs 8 oz. shredded mozzarella cheese 2 9" pie shells, unbaked Cook spinach, drain thoroughly and chop fine. In skillet heat 2 tablespoons butter and saute onion and garlic until brown, stir in spinach. In saucepan melt 3 tablespoons butter, stir in flour and gradually stir in milk. Stir over low heat until sauce bubbles and thickens. Stir in salt, pepper, nutmeg and spinach mixture. Beat eggs well. Stir eggs and cheese into spinach mixture until well blended. Pour into pie shells. Bake in 350 degree preheated oven for 40-45 minutes or until puffed and firm to touch in center. |
