SEBRINES FIREHOUSE CHILI 
2 lbs. ground beef
3/4 c. chopped onion
2 tsp. shortening or drippings
1 tsp. minced garlic
3 tbsp. chili powder
2 tbsp. paprika
3/4 c. chopped celery
1 lb. 12 oz. can chopped tomatoes
1 tsp. salt
3 to 4 (15 oz.) cans kidney beans

Cook meat, onions and celery in shortening or drippings until meat is brown but not crusty. Add garlic, chili powder, paprika, tomatoes and salt. Cover, cook over high heat until steaming, then reduce heat to simmer and cook 1 hour. Add cooked beans or canned beans long enough to heat thoroughly. Serve with crackers.
