CRAB STUFFED POTATOES | |
12 baking potatoes 1 c. butter, melted 1 c. milk 1 tsp. salt 1/2 tsp. pepper Green onions 1 lb. lump crabmeat 1/2 c. mayonnaise 1/2 c. sour cream 1/4 c. lemon juice 1/8 tsp. red pepper Bacon strips, cooked & crumbled Bake potatoes at 350 degrees about 1 hour (until fork tender). Slice potatoes in half lengthwise and scoop out inside leaving 1/4 inch shell. Beat potato with butter, milk, salt and pepper until creamy. Slice green onions and stir white parts into potato mixture (reserve green slices). Spoon into potato shells. Combine crabmeat and next 4 ingredients. Mound on top of stuffed potatoes. Press crumbled bacon on top and bake at 350 degrees for 40-45 minutes. Sprinkle with reserved green onion tips. Yield: 24. |
