EGGPLANT CASSEROLE - FRITOS | |
1 eggplant, peeled & cubed 1 1/2 lb. ground beef or veal, browned & drained, set aside 1 lg. or 2 med. chopped onions 1 lg. green pepper 2 stalks celery, chopped 1 or 2 cloves garlic, chopped Saute above in 1 or 2 tablespoons olive oil. 1 tsp. chili powder Salt & pepper to taste Dash of cayenne Blend into meat mix and seasonings. 1 c. crushed Fritos Stir into mixture. Place combined ingredients into 2 quart casserole. Sprinkle top with grated cheese and edge casserole with whole Fritos. Bake at 325 degrees for about 30 minutes. Serve with Romaine salad and French bread or Spanish bread. Fruit for dessert is nice. |
