SHRIMP DELIGHT 
2 lb. shrimp
3/4 c. butter
1 med. bell pepper
1 onion
1 can cream of celery soup
3 celery stems
2 c. uncooked rice
1 can Rotel tomatoes
Salt & pepper to taste
2 c. water

Saute onions, bell pepper and celery in butter. Mix all the ingredients together. Bake 1 hour at 350 degrees in covered casserole. Stir after 30 minutes.
