SPINACH PESTO 
1 (10 oz.) pkg. frozen spinach, thawed
1 egg white
2 tbsp. dried basil
1 lg. clove garlic, minced
1/4 tsp. salt
3 tbsp. olive oil
2 tbsp. Parmesan cheese

Combine all ingredients in a food processor until smooth. Toss with pasta and cooked carrots.
