POTATO SALAD 
Create the potato salad which is tailor made for your family's taste.

6 potatoes
1/2 c. onion, chopped
1/2 c. celery, chopped
1/4 c. green pepper, chopped
1/4 c. radishes, sliced
1 tsp. parsley, minced
1/4 c. frozen peas, cooked and cooled
2 tbsp. pimento, chopped
1 lg. dill pickle, chopped

1. Boil, cool and peel potatoes.

2. Combine with any or all of the remaining ingredients. (Omit pickle and drastically reduce salt content.)

3. Stir in dressing (see below). Chill before serving.

DRESSING:

1 c. low-fat cottage cheese, blended
1 tsp. prepared mustard
To taste seasoning without salt

1. Combine ingredients and fold into potato salad.

OR ITALIAN VARIATION:

1/2 c. low-fat cottage cheese, blended
1/4 c. Low Calorie Italian Dressing
1 tsp. prepared mustard

1. Combine ingredients and fold into potato salad.
