CHICKEN 'N NOODLES | |
15 lbs. chicken cubes 15 c. (3 lbs.) egg noodles (raw) 3 gallons water 1 tbsp. salt 1 tbsp. oil 2 1/4 c. butter 2 1/4 c. flour 1/4 c. chicken stock 1/2 c. bran 3/4 gallon milk 2 tsp. poultry seasoning 1 tsp. onion powder 100 SERVINGS: 30 lbs. chicken cubes 30 c. (6 lbs.) egg noodles (raw) 3 gallons water 1 tbsp. salt 1 tbsp. oil 4 1/4 c. butter 4 1/4 c. flour 1/2 c. chicken stock 1 c. bran 1 1/2 gallon milk Cook noodles in water, salt and oil. Melt butter; stir in flour. Add milk, bran and chicken stock. Heat until thickened. Combine all ingredients into 2 steamer pans. Bake 1 hour, or until hot, at 350 degrees |
