FRESH APPLE NUT CAKE 
3 c. raw apples, chopped
1 1/2 c. vegetable oil
2 c. sugar
3 eggs
2 1/2 c. self-rising flour
1-2 tsp. vanilla
1 c. pecans, chopped

Peel apples and chop. Beat eggs, add oil and sugar. Beat well by hand. Gradually add flour to creamed mixture, then add vanilla. Fold in chopped apples and pecans.

Bake at 350°F for 1 hour in Bundt pan.

Glaze:

1 1/2 c. sugar
3 tbsp. water
2 tsp. Vanilla

Combine sugar and water.

Add vanilla and pour over cake.
