CHICKEN BLU 
12 boneless chicken breasts, split
3/4 boiled ham
1 lb. Swiss cheese, whole piece, cut in strips
2 cans beef broth
1 to 2 c. Marsala cooking wine
1/2 onion, chopped fine
1 or 2 cloves garlic, chopped fine
1/4 c. chopped fresh parsley
1 c. flour
2 tbsp. paprika

Wrap ham slice around strip of cheese. Place in middle of breast and roll up, tuck in ends. Tie or secure with toothpicks. Roll in flour and paprika mixture. Brown in approximately 1/2 cup of butter. Place in baking dish.

SAUCE:

Saute' onion and garlic in sauce pan for approximately 10 minutes, add broth and cooking wine and parsley, simmer for about 5 minutes. Pour over chicken and cover with foil. Bake about 1/2 hour in 350 degree oven. Place on a platter and pour on some sauce. Nice served with wild rice.

I freeze this by putting 2 pieces of chicken in a freezer bag and covering with sauce. Reheat by placing in microwave on defrost until hot. If you plan on freezing you should double sauce recipe.

Since microwave ovens vary in power, you may need to adjust your cooking time.
