COOKED ARTICHOKES 
2 pkgs. frozen artichoke hearts
Salt

Cook according to package directions; chill and marinate overnight or longer. If fresh artichokes are used, cover artichokes with salted cold water and soak 1 hour. Remove tough outer leaves and stems. Bring 2 1/2 quarts of water to boil, adding 2 teaspoons salt, oil, and lemon or vinegar to water. Add artichokes and cook until tender, approximately 40 minutes. Drain, cool, and marinate.
