FROZEN CHEESE CAKE 
1 (8 oz.) pkg. cream cheese
3 eggs (separate eggs from yolk and beat both)
1 tsp. vanilla
40 vanilla wafers, crushed
1 c. sugar
1 sm. can crushed pineapple, juice included
1 c. heavy whipping cream

Cream sugar and cream cheese until well blended. Add 3 slightly beaten egg yolks; blend well. Add 1 can crushed pineapple and 1 teaspoon vanilla. Blend in 1 cup whipped cream.

Fold in the 3 beaten egg whites which have been beaten with a pinch of salt. Sprinkle 1/2 of the crushed wafers on the bottom of a Pyrex dish. Add the mixture and cover with the remainder of the crushed wafers. Freeze and serve right out of the freezer.
