PUMPKIN MUFFINS 
1 1/2 c. regular all purpose flour
2 1/2 tsp. baking powder
1 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 c. corn flake crumbs
2/3 c. milk
3/4 c. seedless raisins
1 c. canned pumpkin
1/2 c. sugar
1 egg
1/2 c. soft shortening
1 1/2 tsp. sugar

1. Stir together flour, baking powder, salt, cinnamon and nutmeg; set aside.

2. Measure corn flake crumbs, milk, raisins, pumpkin and the 1/2 cup sugar into mixing bowl. Stir to combine. Add egg and shortening and beat well.

3. Add dry ingredients to crumb mixture, stirring only until combined. Fill greased 2 1/2" muffin pan cups 3/4 full. Sprinkle the 1/2 teaspoon sugar over muffin batter.

4. Bake in oven at 400 degrees about 35 minutes or until muffins are golden brown. Serve warm.
