SWEDISH FRUIT SOUP | |
1/2 c. dried prunes 1/2 c. raisins 4 c. water Approximately 1 c. sugar (to taste) 1/4 tsp. ground cinnamon 3 apples, peeled, cored and sliced 2-3 tbsp. corn or potato starch (mixed in 1/4 c. water) You may add fruit cocktail if you wish and may add red food coloring to add color. Bring 4 cups water to a boil, add prunes, raisins, and cinnamon. Simmer until fruit is soft, about 1 hour. Add apples and cook until they are soft. Remove the stewed fruit and measure the remaining liquid. Add enough water to make 4 cups. Dissolve the start in cool water and add to hot liquid. Cook and stir until thickened a couple of minutes. Mix fruit in, stir gently and chill. Serve with whipped cream. Serves 12. |
