PINEAPPLE JELLO SALAD 
1 sm. can crushed pineapple
1/4 c. sugar
1 sm. box lime Jello
1/2 c. hot water
1 grated carrot
3 heaping tbsp. cottage cheese (Farmers style is best)
1/2 c. chopped pecans
2/3 sm. carton Cool Whip

Heat pineapple and sugar to boil, remove from heat. Dissolve Jello in hot water. Mix with pineapple and cool. Add rest of ingredients except Cool Whip. Congeal slightly and add Cool Whip. Pour into mold and let set.
