BLACKEYE CHILI BEANS | |
6 1/2 lbs. beans 2 gallons and 1 qt. hot water 1/4 c. salt 8 lbs. ground beef or turkey 9 lbs. chopped onion (1 gallon 2 c.) 5 lbs. chopped celery (1 gallon 1 qt.) 1/4 c. salt 2 tbsp. pepper 1 tbsp. garlic powder 3/4 c. chili powder 1 gallon and 2 c. tomato puree Rinse beans; add hot water and salt. Soak overnight. Do not drain. Brown meat; add onion and celery; cook slowly. Add seasoning, tomato puree, beans, and bean liquid, and more water if needed. Cook simmering about 1 hour or until chili is thick and beans are tender. |
