RHUBARB BARS 
1/4 lb. butter
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1 egg
1 tbsp. milk
1 (3 oz.) pkg. strawberry Jello (use dry)
2 c. diced rhubarb

Sift flour, baking powder and salt. Beat egg and milk, then add butter to flour mixture. Cut butter into flour. Add/milk mixture to flour/butter mixture. Pat into bottom of 9"x9" pan. Put diced rhubarb over crust. Sprinkle dry Jello over rhubarb. Add crumb topping: 1 c. sugar 1/2 c. flour

Bake at 350 degrees for 30 to 45 minutes.
