PUMPKIN CAKE | |
1 box Duncan Hines yellow cake mix (without pudding) 2 c. canned pumpkin 3 eggs 2 tsp. cinnamon 1/2 c. water 2 tsp. baking powder 1/3 c. vegetable oil 3/4 c. walnuts or pecans 3/4 c. coconut (optional) FROSTING: 1 (8 oz.) pkg. cream cheese 1 tbsp. whole milk 1 tsp. vanilla 2 to 3 c. confectioners sugar Beat the first 7 ingredients together well. Add nuts and/or coconut. Pour mixture into a 13x9 inch baking pan. Bake at 350 degrees for 40 to 45 minutes. Test to make sure center is done. Frosting: Beat all ingredients together except sugar. Add approximately 2 to 4 cups of powdered sugar and mix until smooth and creamy. Spread on top; refrigerating is optional. |
