SWEET POTATO CASSEROLE 
3 c. cooked sweet potatoes
3 tbsp. butter
Pinch of salt
1/4 c. orange juice
1 c. crushed pineapple
1 tbsp. butter
Miniature marshmallows

Mash 3 cups sweet potatoes with 3 tablespoons butter, salt and orange juice. Beat until smooth.

Add 1 cup crushed pineapple. Spoon into 1 quart greased casserole. Dot with 1 tablespoon butter. Sprinkle with marshmallows. Bake at 350 degrees until heated through and marshmallows are brown about 20-25 minutes.
