OKRA-SHRIMP ETOUFEE 
8 c. fresh, sliced okra (2 lbs.)
2 c. fresh tomatoes, peeled and chopped
3/4 c. bell pepper, chopped
2 tsp. salt
1/2 c. water
1/2 c. cooking oil
1 c. onion, chopped
1 tsp. red pepper
1 lb. raw, cleaned shrimp

Combine all ingredients, except shrimp, in a 4 quart pot; cook, uncovered, over medium heat for 30 minutes, stirring frequently to prevent sticking. Reduce heat and continue to cook over low heat for 20-30 minutes more. Add shrimp during last 10 minutes. Remember to stir often. This dish freezes well. Serves 8-10.
