IRISH SODA BREAD | |
3 c. flour 1/4 c. sugar 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 tbsp. caraway seeds 1 1/2 c. dark seedless raisins 1 to 1 1/2 c. buttermilk 2 tbsp. vegetable oil Mix together first 6 ingredients. Add currants; add 1 cup of buttermilk with oil. Stir in flour mixture. Add enough buttermilk to make a soft dough. Turn onto a floured surface and knead gently for 1 minute. Shape into 8 inch rounded greased loaf pan or place on a greased baking sheet. With a sharp knife make slashes on top. Bake in preheated oven at 375 degrees for 40-45 minutes until golden. |
