COCONUT CREAM PIE 
2 c. milk
2 tbsp. coconut
1/4 tsp. salt
1/2 c. sugar
1 tsp. vanilla
3 egg yolks
2 tbsp. cornstarch

Mix all ingredients. Cook over very low heat, stirring constantly until thickened. Pour in cooled, baked pie shell.

MERINGUE:

3 egg whites, room temp.
1/4 tsp. cream of tartar
1/2 tsp. vanilla
1/4 tsp. salt
6 tbsp. sugar

Top with meringue: Beat until peak. Spread over pie. Bake at 300 degrees until brown, just a few minutes.
