EGGNOG BREAD 
1 c. dairy eggnog
1 tsp. vanilla
2 1/4 c. flour
2 tsp. baking powder
2 tsp. rum extract
2 eggs
1 c. sugar
1/2 tsp. salt
1/2 c. butter, melted
1/4 tsp. nutmeg, optional

Beat eggs and add sugar, eggnog, butter, rum extract, vanilla, salt, baking powder, (if desired, nutmeg) and flour. Stirring just until moistened. Pour into 1 large (or 2 small) loaf pan(s). Bake at 350 degrees for 45 minutes.
