ROAST LEG OF LAMB IN A BAG 
6 lb. leg of lamb
2 tbsp. olive oil
2 c. chopped onions
1 (8 oz.) can tomato sauce
1/4 c. white wine
2 tbsp. lemon juice
2 tsp. salt
1 tsp. spearmint
1/2 tsp. oregano
1/4 tsp. minced fresh garlic
1/4 tsp. pepper

Lg. brown grocery bag

Brown leg of lamb in large heavy skillet in olive oil. Place brown grocery bag on its side in a large shallow roasting pan. Place browned leg of lamb inside bag in center.

Saute onions in remaining juices in skillet. Stir in tomato sauce, wine, lemon juice, salt, spearmint, oregano, garlic and pepper. Simmer 3 to 5 minutes. Spoon over lamb coating all of it. Close bag and tuck ends under to seal the bag. Brush bag with oil. Roast 3 to 4 hours at 350 degrees, brushing bag occasionally with oil and baste leg several times with sauce. Serves: 6 to 8.
