MOLASSES CARROT CAKE 
1 c. molasses
1 c. butter
4 eggs
1/2 c. orange juice
1 tsp. vanilla
2 c. flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. salt
2 c. shredded carrots
1 c. chopped walnuts

FROSTING:

3 oz. pkg. cream cheese, softened
2 tbsp. butter
3 tbsp. sugar
1 tsp. grated orange peel
1 tbsp. orange flavoring

In large bowl combine molasses, butter, eggs and orange juice; mix well. Stir in flour, baking soda, cinnamon and salt. Mix well. Stir in carrots and walnuts. Pour into 2 oiled 8" or 9" round cake pans.

Bake at 350°F for 35 minutes.

FROSTING: Combine all frosting ingredients and beat until smooth. Garnish with grated orange peel.
