POTATO PANCAKES 
1/2 c. Egg Beaters cholesterol free 99% real egg product
3 c. cubed raw potatoes
1/2 c. coarsely chopped onion
1/4 c. all purpose flour
1/8 tsp. ground white pepper
2 tbsp. Fleischmann's regular or sweet unsalted butter
Applesauce (opt.)

Place Egg Beaters in blender container; add potatoes, onion, flour and pepper. Blend until cubes are well grated and the mixture is evenly rough in consistency.

Melt 1 teaspoon butter on hot griddle for every 2 pancakes. For each pancake, pour 1/4 cup batter onto hot griddle. Fry on both sides until well browned, about 3 minutes per side. Serve hot with applesauce, if desired. Makes 1 dozen pancakes, 6 servings.
