STREUSEL-TOPPED COFFEE CAKE 
1 1/2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/4 c. shortening
3/4 c. sugar
1 egg, beaten
1 tsp. vanilla
1/2 c. milk

TOPPING:

1/4 c. flour
2 tbsp. packed brown sugar
1 1/2 tbsp. butter, melted
1 1/2 tsp. ground cinnamon

Sift together 1 1/2 cups flour, baking powder and salt.

Cream together shortening and sugar until light and fluffy. Add egg and vanilla; beat well.

Add dry ingredients alternately with milk, stirring just until mixed. Spread batter in greased 9 inch square baking pan.

Combine 1/4 cup flour, brown sugar, butter and cinnamon; mix well. Sprinkle over batter.

Bake in 375 degree oven 30 minutes or until toothpick inserted in center comes out clean. Cut in squares and serve warm. Makes 9 servings.
