FRIED RICE 
1 c. rice, cooked & cooled
2 tbsp. oil
1/2 c. chopped onion (green or white)
1/2 c. chopped green pepper (bell pepper)
1 tbsp. chopped red chili, optional
2 c. leftover cooked vegetables
1 c. cooked ham, pork, chicken
3 eggs, scrambled, raw
2-3 tbsp. soy sauce

Fry onion and green pepper in oil in wok or large fry pan on high. Add raw vegetables and stir fry 2 minutes. Add cooked vegetables and meat. Add rice and mix. Add soy sauce to raw scrambled eggs and pour over all. Lower heat to medium and mix gently until egg is set. Serve with more soy sauce.
