FRIED RICE | |
1 lean pork chop 1/2 c. minced ham 1/4 c. peanut oil 1 med. onion, chopped 1 med. green pepper, chopped 1/2 c. chopped parsley 1 clove garlic, minced 1 tsp. salt 1/8 tsp. pepper 1/2 tsp. powdered ginger 3 to 4 c. cooked rice 4 eggs Cut pork in strips and cook with ham in 2 tablespoons oil until brown. Add onion, green pepper, parsley and garlic. Cook until tender. Add remaining oil, salt, pepper, ginger and rice. Stir lightly to mix. Make a well in center of rice mixture. Add eggs and cook until semi-solid. Stir into rice while cooking over medium heat 2 to 3 minutes. Put other recipe on top of this and serve. Place chicken on fried rice, pour sweet sauce as desired, then sprinkle with shaved macadamia nuts or slivered almonds. Serve. SWEET AND SOUR SAUCE: 2 tbsp. brown sugar 2 tbsp. soy sauce 2 tbsp. cornstarch 1/4 c. vinegar 1/4 c. cold water Simmer 15 minutes, and add minced red bell pepper. |
