FRIED RICE 
1 c. rice
1 c. diced ham, shrimp or chicken
1/2 c. frozen peas & carrots
2 eggs
1 diced green onion
1 tbsp. soy sauce
Vegetable oil
Salt & pepper

Cook rice and scramble eggs to put aside.

In a deep frying pan or wok, heat 2 tablespoons oil until hot. Stir fry peas and carrots until tender with 1 tablespoon soy sauce. Put the vegetables aside.

Heat 4 tablespoon oil until warm, mix with cooked rice and stir fry to break apart the rice. Add chopped ham and cooked peas & carrots. Continue to stir fry to mix them well. Mix in scrambled eggs and chopped green onions. Season with salt and pepper (sprinkle with a few drops of soy sauce or liquid butter if the rice appears dry.)
