FRUIT COMPOTE 
2 tbsp. water
1 tbsp. honey
1 1/2 tbsp. lime juice
1 tsp. grated lime rind
1 c. cantaloupe balls
1/2 c. seedless green grapes, halved
1 kiwi fruit, peeled and coarsely chopped
Fresh mint

Combine honey and water in a small non-aluminum saucepan. Simmer over low heat until honey dissolves, stirring occasionally. Remove from heat and let cool. Add lime juice and rind. Combine fruit in a medium bowl; add lime syrup, tossing gently. Cover and chill 2 hours. Garnish with mint. Serves 2.
