PORK BARBECUE | |
Fresh pork butt BARBECUE SAUCE: 1 c. catsup 1/2 c. vinegar 1/2 c. water 1/4 c. brown sugar 4 tsp. salt 1/4 stick butter 1 tbsp. Worcestershire Tabasco (to taste) Mix and heat until butter is melted. (You can adjust this to your own taste. Some prefer more vinegar, less sugar, etc.) Place meat on broiler pan on the lower part of oven. Put fat side up. Cook at 250 degrees for 6 to 8 hours, or until meat will fall apart easily. (I usually cook about 8 or 10 pounds at one time.) While meat is still warm, tear apart (remove excess fat). Place in a baking dish and add sauce. Mix well and bake in a slow oven for 15 to 20 minutes. This barbecue is very good reheated. it may also be frozen. |
