FRESH PLUM PIE 
6 c. pitted, sliced purple plums
1 1/4 c. sugar (if desired use part brown sugar)
1/4 c. instant tapioca
1/8 tsp. salt
1/4 tsp. cinnamon
Grated rind of 1 lemon and the juice
2 tbsp. butter chips

Combine all ingredients except butter. Let stand for 15 minutes. Put in deep dish 9 inch pie crust. Dot with butter. Use either whole top crust (vented) or lattice top. Bake at 400 degrees for 40 minutes.
