FRESH PLUM TOMATO SAUCE 
20 plum tomatoes
1 med. onion
2 cloves garlic, chopped
1/3 c. oil
1 sm. can tomato paste
1 tsp. sugar
2 tsp. chopped basil
1 tsp. chopped parsley
Salt and pepper to taste

Peel tomatoes and chop. Should be around 16 ounces. Lightly brown onion and garlic in oil. Add tomato paste and stir. Add plum tomatoes, sugar and seasonings. Simmer for about 1 hour.
