PINEAPPLE CAKE | |
2 c. cake flour 2 c. sugar 2 eggs 20 oz. can crushed unsweetened pineapple 2 tsp. baking soda 1/4 tsp. salt 1 tsp. vanilla 1 c. chopped nuts ICING: 8 oz. cream cheese 1 stick butter 2 c. powdered sugar 1 tsp. vanilla 1/2 c. chopped nuts (optional) Half this amount may be all you desire using 3 oz. pkg. cream cheese Sort of through this cake together, too much mixing may start soda working too soon. Beat eggs slightly; add sugar and vanilla. Add pineapple (slightly drained, if at all). Add sifted fry ingredients all at once and mix only until moistened. Add nuts. Pour into greased and floured 9 x 13 inch pan. Bake 35 to 40 minutes at 350 degrees. Cool cake; then spread with icing. |
