CRISP OATMEAL COOKIES 
1 c. butter
1 c. brown sugar
1 c. granulated sugar
1 egg
1 tsp. vanilla
1 1/2 c. flour
3/4 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 1/2 c. rolled oats
3/4 c. coconut

Cream butter, sugar, egg and vanilla. Add flour and other ingredients. Chill about 1 hour. Roll into small balls, flatten with fork. Bake at 375 degrees for 9-10 minutes. Yield: 7 dozen. Cookies expand while baking so leave room between cookies.
