CINNAMON CRISPS COOKIES 
2 c. flour
Dash of salt
2 1/2 tsp. cinnamon
1 c. butter
1 c. sugar
1 egg, separated
1/3 c. finely chopped or ground pecans, optional

1. Sift flour, salt and cinnamon together. Set aside.

2. Cream butter and sugar. Beat in egg yolk.

3. Gradually add the sifted dry ingredients. The dough will be stiff. Add pecans.

4. Form into smalls balls and flatten gently with hand. Crisscross with fork and brush with egg white.

5. Bake on a ungreased cookie sheet.

This recipe is clearly lacking oven temperature and cook time. You'll want to play around with it a bit depending on what kind of cookies you're looking for, but 12-15 minutes at 325°F worked for me.
