MINCEMEAT BARS 
1 1/4 c. unsifted flour
1 c. brown sugar
1 c. flaked coconut
1 c. firmly crushed saltines, approximately 26
1/2 c. butter, melted
1/2 tsp. baking soda
2 tsp. grated lemon rind
1 1/3 c. mincemeat
1/2 c. chopped nuts

Preheat oven to 350 degrees. In a large bowl, mix well all ingredients except nuts and mincemeat. Reserve 1 cup crumbs. Press firmly the rest of crumb mixture in greased 9 x 13 inch pan. Spoon mincemeat over crust. Top with remaining cup of crumbs and nuts. Press gently, bake for 30 minutes until edges are lightly browned. Cool completely and cut into bars.
