FLAN (CUSTARD) 
1 c. white sugar
3 eggs, yolks only
8 oz. can evaporated milk
8 oz. water
1 tsp. vanilla
Sprinkle of salt
Slice of lemon peel, grated

Melt 1/2 cup sugar in an 8 inch round cake pan. Cover sides and bottom with melted sugar. Set pan aside to cool. Sugar will crack.

Beat egg yolks with 1/2 cup sugar until creamy. Add milk, water, vanilla, salt and lemon peel. Mix well. Pour mixture into cake pan. Put cake pan into a larger, deeper pan. Add water to large pan until halfway up the side of 8 inch round. Bake 1 hour at 350 degrees.
