"THE BEST" OATMEAL COOKIES 
1 1/4 c. quick cooking oatmeal
1 c. sifted plain flour
1/2 c. sugar (white)
1/2 c. sugar (brown)
1 c. flaked coconut
1/2 c. semi-sweet chocolate pieces
1/2 c. dark raisins
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. vegetable oil
1 egg
1 tsp. vanilla

Measure and place dry ingredients in a bowl. Mix well. I use my hands. Stir in oil, egg and vanilla. Mixture may seem almost dry. Form into 1 inch balls. Place on ungreased baking sheet about 2 inches apart. Bake at 325 degrees for 10 to 12 minutes. I move my oven rack up to center of oven to avoid burnt bottoms on cookies. Yield 3 1/2 dozen.
